Olive and anchovies (60%), dressing based on extra virgin olive oil, aromas, salt, ascorbic and citric acid.

Production:
Our patés are exclusively made by selected first quality grounded and seasoned brine olive. We mix and season them with anchovies. Then we mix the obtained cream with our precious extra virgin olive oil extracted cold. Our GREEN OLIVES PATE’ WITH ANCHOVIES is ready to be potted and pasteurized. Despite executing an handmade process, the farm respects every hygienic measures provided for by the law (HACCP system).
Taste:
To the smell it releases a precious note of orange, to the taste it presents a strong and elegant flavor, a modern interpretation of ancient taste. It’s perfect for bruschetta, canape, vol-au-vent, to be served as appetizers or light entrées, simple but enjoyable. Also great paired with cheese.

RECIPE
Millefoglie pastry made with pane carasau, fresh anchovies, olive oil paté with anchovies and courgette flowers.

PREPARATION TIME: 1 hour



INGREDIENTS:
500 gr cleaned fresh anchovies
2 courgette flowers bunch
2 basil and parsley bunch
2 tb spoons of olive oil patè with anchovies
2 tb spoons of bio olive oil with lemon
1 package (300g) of pane carasau
1 burrata cheese
2 teaspoons of bio olive oil with citron
Half lemon
METHOD:
Season the anchovies with bio olive oil with citron and bio olive oil with lemon, salt, pepper, grounded parsley and 1/2 lemon juice. Put the anchovies open and elongate in an oven pan and cook for about 3 minutes at 180 degrees. Make many mono layers in box of 10cm or directly in the pan putting a piece of carasau bread, a layer of olive paté, a little of burrata, 1 cleaned courgette flower, 1open anchovies, 1 slice of basil and again carasau. Make at least 2 layers. Put everything in the oven with grill for 2minutes.
